Zwei Dinge, die mich immer glücklich machen: mexikanisches Essen und Guacamole. Für mich sind Burrito Bowls und co. wahres Soulfood! An einem kühlen Frühlingstag habe ich kürzlich ein perfektes Gericht gezaubert: mexikanischer Bohneneintopf mit Guacamole.
Der Bohneneintopf ist pflanzlich, dank der weißen Bohnen super proteinreich, voller Ballaststoffe und ideal für Mealprep. Man kann das Gericht für mehrere Tage vorbereiten, mit in die Arbeit nehmen oder auch zu Hause eine größere Runde bekochen.
Mexikanischer Bohneneintopf mit Guacamole
Für 4 Portionen:
Bohneneintopf
- 2 Dosen weiße Dosen
- eine große Süßkartoffel (ca. 500-600g)
- 2 Dosen gestückelte Tomaten
- 2 Paprika
- 1/2 Tube Tomatenmark
- 2 TL Salz
- 1 Tl Chiliflocken/Chilipaste aus dem Glas
- 1 gestrichener TL Kreuzkümmel
- 1 Zwiebel
- 1 Zehe Knoblauch
- 3 EL Olivenöl
- 10g Zartbitterschokolade
- 100ml Wasser
Guacamole
- 2 Avocados
- 1/2 TL Chiliflocken
- 1/2 TL Salz
- 1/2 TL Pfeffer
- Saft einer halben Zitrone
- Optional: klein gewürfelte Zwiebel und Tomaten
Süßkartoffel schälen und in 1×1 cm große Würfel schneiden. Den Paprika vierteln und in längliche Streifen schneiden. Zwiebel und Knoblauch hacken und die Bohnen aus der Dose gut waschen.
Zwiebel und Knoblauch in Olivenöl anrösten, bis die Zwiebelwürfel leicht glasig sind. Nun die Süßkartoffelwürfel dazugeben und auf mittlerer Hitze rösten. Nach 5 Minuten die Paprikastreifen hinzufügen und ebenfalls rösten. Gewürze, Tomatenmark und Salz unterrühren und vorsichtig kurz mitrösten lasten. Hierfür eventuell die Hitze ein wenig reduzieren. Mit dem Wasser ablöschen und die Tomaten aus der Dose sowie Bohnen in den Topf geben. Auf niedriger Stufe mit geschlossenem Deckel kochen lassen bis die Süßkartoffeln weich sind. Nun die Zartbitterschokolade hinzufügen und weitere 10 Minuten ziehen lassen. Die Aromen der Schokolade verleihen dem Gericht eine besondere Note und passen super zu der Schärfe der Chilis.
Wenn der Eintopf eine cremige, nicht mehr ganz flüssige Konsistenz angenommen hat, kann er warm serviert und mit der Guacamole getoppt werden.
