Heute kommt eines meiner und Chris Lieblingsrezepte für euch – und zwar mein veganes Green Curry. Super schnell gekocht, ideal zum Mitnehmen und voller Nährstoffe.
Das Curry kann grundsätzlich je nach Saison abgewandelt werden und funktioniert mit jedem Gemüse toll. Damit es ein richtiges Green Curry ist, empfehle ich euch natürlich vorwiegend grünes Gemüse. Meine Favoriten sind Brokkoli, Pilze und Zucchini, aber auch Auberginen machen sich toll im Curry.
Veganes Green Curry (2 Portionen):
- 1 Dose Kichererbsen
- 1/2 Brokkoli
- 1 Zucchini
- 2 Handvoll Champignons
- 1 EL Erdnussmus
- 1/2 TL Kurkuma
- 1/2 TL Koriandersamen gemahlen
- 1/2 TL Kreuzkümmel
- 3 EL Sojasoße
- 1 Dose light Kokosmilch
- Optional: frischer Koriander
- 150 g Reis
- 1/2 Knoblauchzehe
- 1/2 Zwiebel
- 1 EL Sesamöl
Den Reis im Topf oder Reiskocher nach Packungsanleitung mit Salz kochen und in der Zwischenzeit Knoblauch fein hacken, Zwiebel in kleine Würfel schneiden und das restliche Gemüse vorbereiten. Zwiebel und Knoblauch in Sesamöl anschwitzen. Nach 2-3 Minuten kommt das restliche Gemüse dazu und wird scharf angebraten. Nach 5-10 Minuten die Gewürze unter das Gemüse heben und unter häufigem Umrühren kurz mitrösten. Die Kichererbsen gut waschen und ebenfalls in die Pfanne geben. Mit Sojasoße und anschließend mit Kokosmilch und Erdnussmus ablöschen. Köcheln lassen, bis das Gemüse gar ist und unmittelbar vor dem Servieren frischen Koriander hinzufügen.
Tipp: geröstete Erdnüsse machen sich besonders gut als Topping!
